Anything With Butterscotch Chips Has Got To Be Good


Butterscotch Apple Cake Recipe

INGREDIENTS:

* 1 cup vegetable oil
* 2 eggs
* 2 cups sugar
* 2-1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1 teaspoon baking soda
* 3/4 teaspoon cinnamon
* 3 large apples, peeled, cored, and chopped
* 1 (6-ounce) package butterscotch chips

TO PREPARE:

Preheat oven to 350 degrees. Thoroughly mix oil, eggs, and sugar. Sift flour, baking powder, salt, baking soda, and cinnamon; blend with egg mixture. Batter will be very thick. Stir in apples. Pour into an ungreased 9- by 13-inch pan. Sprinkle with butterscotch chips. Bake for 45 to 60 minutes. Cool thoroughly. Cut into approximately 3-inch squares.

SERVES: 12 - 14
